Another day of rushing around today. Were headed to Corpus Christi to celebrate my hubby's birthday so with any luck I'll be able to put up some restraunt reviews for everyone.

Well today I haven't made anything amazing. My husband's birthday is toady so we have company coming over. I was in charge of appitizers and I think I may have gone a little overboard.

The great thing is everything but the guacamole and the bean dip are vegan so I don't have to starve.

Since I haven't done anything amazing I'll pass on a recipe I came across the other day at the Fat Free Vegan blog.


This is a great one for those of us in the hot spots in the world. I tried it the other day and it was perfect to cool down with and on top of that it's healthy!!!

Breakfast is served!

I don't have a name for this other than delicious.

Ingredients

1 large russet potato boiled

about 2 tbs olive oil

salt and pepper to taste

1/4 bell pepper

1/4 cup red beans (my fav)

1/4 onion

2 small cloves of garlic


jalapeno (optional)

picante sauce (optional)


Prep: Dice the onion garlic and bell pepper add in the jalapeno if you want it. Shred the potato.

Heat the pan to medium heat add the oil. Drop the shredded potato into the hot oil make sure it is all together. Add the rest of it on the top. cook until it can move around in the pan without breaking apart.

The hard part comes now. Flip it over (all in one piece if you can) and cook until the other side is done.

move to plate and add beans and picante sauce.

Hola from Houston!

Well I've done it. I've started a blog! I never thought I would be one of those people who would have something they were so interested in that they would auctually share there experiences with the world.

I'm still new to veganism so I thought I would share my experiences as I had them and maybe help someone else out there who loves there spicy foods and southern recipes. (I am a Tex Mex fanatic). So here we go on the adventure of a lifetime (Not really but I wanna be a drama queen sometimes).










Figured I would start with something very simple.

Vegan Spicy Bean Dip

1 can Refried beans (be sure to read the label some have animal fats in them)

1 can Rotel

1/2 cup cheese (Optional I like it just fine without it, but if you really need your cheese any replacer will do so long as it melts well.)


In a medium sauce pan spoon in refried beans. Add Rotel and cheese. Stir till all is mixed well and poof you have a tasty bean dip or an alternative to the refried beans on any Tex Mex plate.

I love this stuff! It's good enough that even your non vegan friends can enjoy it.

I promise to do more in depth things as I try them. I'm excited about my journey into veganism and all the new flavors and recipes that I'm going to get to experience.
